Very Spicy Fried Rice

Sauce

    Combine soy sauce , chili garlic sauce , and chili oil with chili flakes in a bowl .

Fried Rice

    Heat a wok over high heat; add cooking oil and swirl to coat. Add garlic (chopped), freshly grated ginger , and green onions (chopped) and stir fry until fragrance is released, about ⏱️ 30 seconds .

    Push all ingredients into one side of wok and make room for eggs. Add eggs (beaten with 2 tsp sriracha, pinch of salt and pepper) and scramble, but not mixed with other ingredients yet. When eggs are fluffy and nicely cooked, toss to mix with all other ingredients in wok.

    Stir in cold jasmine rice (day old), sauce, and yu choy (cut into bite sizes, approximately 1 cup). Keep stirring and tossing until every grain of rice is evenly coated with sauce and yu choy is cooked, about ⏱️ 1 minute .
