Salad

    In a medium bowl , combine grape tomatoes (halved), cucumber (diced), chickpeas (drained and rinsed), green bell pepper (diced), fresh parsley (chopped), and red onion (finely diced).

Dressing

    Add olive oil , red wine vinegar , cumin , salt , and black pepper . Toss well to combine.

    If using, cut avocado (optional) into cubes and place in a small bowl . Squeeze juice from lemon over the avocado and gently stir to combine. If not using avocado, squeeze 1 to 2 tbsp lemon juice over the salad and toss.
