Starter (8-16 hours in advance)

    Combine water , yeast , bread flour , and wheat flour in a bowl . Cover and let ferment for 8-16 hours.

Dough

    Combine starter with water , yeast , sugar , bread flour , and salt . Knead until smooth and elastic.
    water: 1 c, yeast: 3/4 tsp, sugar: 1 tbsp, bread flour: 3.75 c, salt: 1.5-2.25 tsp

    Proof at 77 F until doubled.
